2 lbs boneless, skinless chicken breasts, cut into bite-sized pieces
2 cups sliced mushrooms
1 cup chopped onion
1 cup chopped celery
1 cup chopped carrots
3 cloves garlic, minced
1/4 cup all-purpose flour
2 cups chicken broth
1 cup milk
1 tsp dried thyme
1/2 tsp salt
1/4 tsp black pepper
1 cup frozen peas
4 cups cooked white rice
2 cups shredded cheddar cheese
Directions
- Preheat oven to 350°F.
- In a large skillet, cook chicken over medium-high heat until browned on all sides. Remove chicken from skillet and set aside.
- In the same skillet, add mushrooms, onion, celery, carrots, and garlic. Cook until vegetables are softened, about 5-7 minutes.
- Sprinkle flour over vegetables and stir to combine. Gradually stir in chicken broth and milk, stirring constantly, until sauce is smooth.
- Add thyme, salt, and pepper to the sauce and bring to a simmer. Simmer for 2-3 minutes, stirring occasionally.
- Add chicken and peas to the sauce and stir to combine.
