1 1/4 cups Oat flour (150 g)
3/4 cup Whole wheat flour (100 g)
1/3 cup Sugar (80 g)
1 teaspoon baking powder (5 g)
1 large egg
1/4 cup Melted butter (50 g)
2 1/2 tablespoons Maple syrup (40 g)
2 1/2 tablespoons Sour cream (40 g)
1/4 teaspoon salt
1 teaspoon cinnamon (optional, but highly recommend)
Directions
- In a bowl, add 1 1/4 cups Oat flour (150 g);
- Add 1 1/4 cups Oat flour (150 g);
- Add 1 teaspoon baking powder (5 g);
- Add 1 teaspoon cinnamon;
- Whisk well;
- In another bowl, add 1 large egg;
- Add 1/3 cup Sugar (80 g);
- Add 1/4 teaspoon salt;
- Beat lightly;
- Add 2 1/2 tablespoons Maple syrup (40 g);
- Add 2 1/2 tablespoons Sour cream (40 g);
- Add 1/4 cup Melted butter (50 g);
- Stir;
- Add flour mixture;
- Stir just to combine;
- Scoop the batter about 2 tablespoons;
- Toll a balls (12);
- Space balls 2 inches apart;
- Flatten halfway;
- Bake in a preheated 350F (175 C) oven for 20 to 25 minutes until the edges are lightly golden brown;
- Allow to cool completely on a rack;
