Ingredients

  • Batter
  • ⅓ cup all-purpose flour

  • ¼ tsp baking powder

  • A pinch of salt

  • ⅓ cup water

  • ½ tsp soy sauce (as a substitute for dashi powder)

  • Filling
  • 1 egg

  • 1 cup cabbage, coarsely shredded

  • ¼ cup green onion, finely chopped

  • ¼ cup Panko bread crumbs (as a substitute for tenkasu)

  • 1 Tbsp red pickled ginger (Beni-shoga)

  • 3 strips of bacon

  • Toppings
  • Bonito flakes (Katsuobushi)

  • Green onion

  • Sauce
  • Okonomi sauce

  • Kewpie mayonnaise

Directions

  • In a bowl, add ⅓ cup all-purpose flour;
  • Add ¼ tsp baking powder;
  • Add A pinch of salt;
  • Whisk;
  • Add ⅓ cup water;
  • Add ½ tsp soy sauce (as a substitute for dashi powder or stock), to add an umami flavor;
  • Mix well;mix well
  • Finely chop green onion (about ¼ generous cup);
  • Coarsely shred cabbage (about 1 generous cup);
  • Add the vegetables to the batter;
  • Add ¼ cup Panko bread crumbs (as a substitute for tenkasu), to add a crunchy texture;
  • Add 1 Tbsp red pickled ginger (Beni-shoga);
  • Add 1 egg;
  • Mix all the ingredients together until well blended;mix
  • Heat the pan over medium-high heat;
  • Add about 1 Tbsp vegetable oil and heat until shimmering;
  • Pour the mixture into the pan and spread evenly;
  • Let cook for a couple of minutes;
  • Then lay 3-4 strips of bacon across the top of the pancake;
  • Cook until golden brown over medium to medium high heat;bacon
