Ingredients

  • 500g pumpkin

  • 1 medium potato

  • 1 medium onion

  • 1 small celery stalk

  • 1 small carrot

  • 3-4 fresh sage leaves

  • 2 garlic cloves

  • 1 tsp salt

  • 1/2 tsp nutmeg

  • A pinchof white pepper

  • 100 ml of oat cream or coconut milk

Directions

  • Clean and chop the onion;
  • Clean and chop the carrot;
  • Chop the celery stalk;
  • Peel and cut the potato;
  • Crush and peel the garlic cloves;
  • Cut the pumpkin in half and clean it from the seeds and skin;
  • Cut the pumpkin into cubes;
  • In a pan, add 3 tbsp of olive oil;
  • Add the garlic clove;
  • Add the fresh sage leaves;
  • Add onion;
  • Add the carrot;
  • Add the celery;
  • Add the pumpkin;
  • Add 1 tsp of salt;
  • Add 1/2 tsp of nutmeg;
  • Add a pinch of white pepper;
  • Stir;stir
  • Add the potato;
  • Add 300ml of water or vegetable broth;
  • Cover and let it simmer for 20 minutes over medium flame;
