Soba Noodles are also considered a healthier alternative to other types of noodles as they are lower in calories and higher in protein and fiber. Soba noodles can be found in many grocery stores and Asian markets.

Ingredients

  • 8 ounces of soba noodles

  • 4 cups of water

  • 1 tablespoon of salt

  • 1 tablespoon of soy sauce

  • 1 tablespoon of sesame oil

  • 1 teaspoon of sugar

  • 2 cloves of garlic, minced

  • 1 tablespoon of grated ginger

  • 1 green onion, thinly sliced

  • 1 tablespoon of toasted sesame seeds

  • Optional toppings: sliced cucumber, shredded carrots, sliced avocado, cooked shrimp, or chicken

Directions

  • In a large pot, bring 4 cups of water and 1 tablespoon of salt to a boil.
  • Add the soba noodles to the pot and cook for 5-7 minutes, or until they are tender.
  • Drain the noodles and rinse them under cold water to stop the cooking process.
  • In a small bowl, mix together the soy sauce, sesame oil, sugar, garlic, and ginger.
  • In a large bowl, toss the cooked and cooled soba noodles with the sauce until the noodles are evenly coated.
  • Garnish with sliced green onions and sesame seeds.
  • Add any optional toppings that you desire, such as sliced cucumber, shredded carrots, sliced avocado, cooked shrimp, or chicken.
  • Serve cold or at room temperature. Enjoy!
