  • 4 cups cubed sweet potatoes

  • 1/2 cup white sugar

  • 2 eggs beaten

  • 1/2 tsp. salt

  • 4 tbsp. unsalted butter, softened

  • 1/2 cup milk

  • 1/2 tsp. vanilla extract

  • 1/2 cup packed brown sugar

  • 1/3 cup all-purpose flour

  • 3 tbsp. unsalted butter, softened – cut into sugar/flour

  • 1/2 cup chopped pecans

Directions

  • In a bowl I have some brown sugar and adding in flour. Just giving that a good stir.
  • Next, I’m adding in some room temp unsalted butter and cutting the butter into the brown sugar and flour mixture until they are fine crumbles.mixture butter
  • Adding in some chopped pecans and giving it a good toss and setting to the side.

  • I’m boiling 4 cups cubed sweet potatoes for about 20 minutes or until they’re fork-tender and then draining.
  • Give them a good mash.
  • Adding in some sugar, eggs, salt, butter, milk and pure vanilla extract.
