Tofu is a food produced from soybeans. It has a firm texture similar to cheese and serves as another meat alternative, delicate flavor, creamy white color and comes in the form of a white block. It originates from China, but is also very common in Japanese and Korean food. The manufacturing process from soy milk is very similar to that of cheese made from milk, also having the same consistency. It is therefore also known as soy cheese. It has a mild flavor and is therefore generally used in relatively simple recipes. In Asian cuisine, tofu is used in all kinds of recipes, both sweet and savory. It can be eaten raw, fried, cooked in soups or sauces, steamed, stuffed with different ingredients, or fermented as pickles, etc. Nutritionally it has a very rich protein content and that is why it is used in the West as a meat substitute by vegetarians. The most used coagulants are magnesium chloride and nigari. It is also possible to coagulate soy protein with lemon or vinegar, but these change the taste of the tofu and are not as effective. Another possibility is calcium chloride.

Korean Spicy Tofu Fritters

Today I will make crispy tofu fritters, made with delicious veggies and Korean fermented seasoning ingredients, such as hot pepper paste and soy bean paste. It is called DuBu JangTteok (두부 장떡) in Korean.

Ingredients

  • Main Ingredients
  • ½ Pack Extra Firm Tofu (½ lb)

  • ½ Cup Korean Frying Mix or All Purpose Flour

  • ¼ Cup Water

  • ⅓ Cup Garlic Chives

  • ¼ Cup Onion

  • ¼ Cup Perilla Leaves

  • 1 Tbsp Red Hot Pepper

  • 1 Tbsp Hot Pepper paste

  • ½ Tbsp Soy Bean Paste

  • Some Cooking Oil for Frying

  • Dipping Sauce Ingredients
  • 1 Tbsp Soy Sauce

  • 1 Tbsp Water

  • ¼ tsp Vinegar

  • ¼ tsp Sugar

Directions

  • Chop the garlic chives, perilla leaves, and the onion into little pieces;
  • Slice the red hot pepper thinly;
  • Get a half pack of extra firm tofu (½ lb), Then, mush the tofu with your hands;mushing tofu
  • Combine the tofu, all the chopped veggies;
  • Add 1 Tbsp Hot Pepper paste;
  • Add ½ Tbsp Soy Bean Paste;
  • Add ½ Cup Korean Frying Mix or All Purpose Flour;
  • Add ¼ Cup Water;
  • Mix everything well. The Korean frying mix makes this crispy outside, but you can also use normal wheat flour instead.;mixing ingredientes
  • Add 1 generous Tbsp of cooking oil in a heated pan and put in a spoonful of the tofu mixture. Make it flat into a circle shape;
  • If you love spicy food like me, it is great to put a slice of red hot pepper on it for color and flavor;
  • Fry it for about 3 minutes on medium-high. After 3 minutes, flip the patties and fry for another 3 minutes or until both sides become nicely golden brown;frying
